A cross between a Cornish Game cockerel and a Sussex or Dorking hen. Reared for 130 days in the outdoors free ranging over grass and herbage in the heart of the Belvoir Estate in Leicestershire.  As with all Botterills' birds, they are dry-plucked and game hung for a good shelf life and extra depth of flavour. Giblets included. SERVING SIZE these birds weigh between 3.5 to 4 kg to serve up to 8

To avoid the stress from unnecessary travelling, the birds are slaughtered on site on the Belvoir Estate, dry-plucked by hand and hung guts-in for 7-14 days to allow for greater flavour and succulence. The giblets are then removed, vacuum-sealed and included with the bird.

Please be aware while we do our utmost to select the right size bird for you, weights are subject to some seasonal variation so we have to work with what nature gives us in December.

Cooking Instructions

The Botterill's birds are dry-plucked to ensure a longer shelf-life, this leaves a few stubble-quills; these are completely harmless and will disappear during cooking.

Take your cockerl out of the fridge 3 hours before cooking. Season bird well. Put on rack in roasting tin with a cup of stock or wine. Cook at 220°C for 30mins. Reduce heat to 160°C and cook for 1hour 15mins, basting regularly. Stick a skewer in the fleshiest part to test for doneness, the juices should run clear. Wrap well in foil, and rest for 20 mins before carving.

Storage Advice

Please remove all wrapping and place your bird on a plate on the bottom shelf of your fridge away from cooked items so that air can circulate properly.
