Cooking your Beef Wellington

 

ALL INSTRUCTIONS ARE GUIDELINES,PLEASE ENSURE THAT YOU PROBE THE CENTER OF THE MEAT TO ENSURE THAT THE CORRECT TEMPERATURE HAS BEEN REACHED AS ALL OVENS ARE DIFFERENT

50’C rare, 60’C medium, 65’C for medium welll

 

Before cooking

Preheat oven to 200°C Fan. Remove wellington from the fridge.
Glaze the pastry all over with an egg wash
(1 whole egg and 1 tablespoon milk whisked).
Continue cooking according to size:


6 Person Wellington -

i. Reduce the temperature of the oven to 180°C Fan

ii. Place wellington in the centre of the oven and roast for -
45 mins medium rare, 50 mins medium, or 55 mins medium well.

iii. Remove from oven, cover in foil and allow to rest for 20 mins.


4 Person Wellington -

i. Reduce the temperature of the oven to 190°C Fan

ii. Place wellington in the centre of the oven and roast for -
40 mins medium rare, 45 mins medium, or 50 mins medium well.

iii. Remove from oven, cover in foil and allow to rest for 20 mins.


2 Person Wellington -

i. Reduce the temperature of the oven to 190°C Fan

ii. Place the wellington in the oven and roast for -
35 mins medium rare, 40 mins medium, or 45 mins medium well.

iii. Remove from oven, cover in foil and allow to rest for 20 mins.

Refrigerate as soon as your order arrives.
