Two-hour Barnsley Chop


Barnsley chops can be cooked quickly - seasoned, seared and left slightly pink in the middle - to great effect. But they can also be cooked very slowly until meltingly tender, falling from the bone with very little pressure.

This is our homage to the Barnsley original, the Brooklands Hotel dish in which a large double lamb chop is slow cooked in a rich gravy and served with minted potatoes and vegetables.
